TBFKAOP Presents: Oven Roasted Broccoli


Have you ever watched your toddler throw an all out fit because you aren’t having broccoli for dinner? No? Then you obviously haven’t made oven roasted broccoli. And there’s really no reason NOT to make it – it’s healthy green, it’s easy, and it’s incredibly delicious.

Let me back up a second … I’m sure right now you’re all going, “Um, OK. I like broccoli. But who ARE you and what are you doing on RITK?” Well, I’m Jenn from TBFKAOP, a friend of Amy’s, and a lover of all things vegetable. Or most things vegetable. As a vegetarian, you sorta have to be that way.

Back to the broccoli – I first saw this recipe on The Amateur Gourmet. It's an adaptation of a recipe from The Barefoot Contessa. On The Amateur Gourmet’s blog, he mentions that his friend said this broccoli recipe would make kids beg for broccoli. He was right. Or, if your kid is only two, it would make your kid throw herself in the floor screaming, “WHERE ARE THE TREES!?! I need trees for dinner!” It might also make your husband (who until this recipe only consumed broccoli in the raw form and is not a vegetarian or vegetable lover) do something similar.

My recipe is similar to that on the blog, with a few adaptations for areas where I’m lazy and/or messy. Here’s what you’ll need:

Two bunches of broccoli
Olive Oil
4 garlic cloves
Salt and Pepper
1/3 cup of freshly grated Parmesan
Half a lemon
And, you know, an oven, a bowl and a cookie sheet.

First thing’s first – pre-heat your oven to 425deg. The Amateur Gourmet says (via Jacques Pepin) that you don’t need to wash your broccoli. That sorta freaks me out, so I wash mine and dry thoroughly. Then cut into florets. Here’s the adaptation for me being mess – I put the florets in a bowl, THEN drizzle on the olive oil. Eyeball it – should be just enough to coat the broccoli thoroughly. Then add in a bit of salt and pepper, the 4 garlic cloves, and toss well.

Once you’re satisfied with your tossing abilities, spread the broccoli on the pan and stick it in the oven for about 25 minutes. Remove the pan from the oven and squirt the lemon over the broccoli. Then spread the Parmesan over the whole thing.

Then eat it. Eat LOTS of it. And probably add it to your meal plan for the next week because you’re going to want to be seeing it again very soon.

Still no power to Red

She's still down.  I miss my laptop.  She's like my third baby! lol

I will try to write more later today while my Sous Chef naps but I don't know if that is going to happen.  Napping has been a battle here lately.  But that goes with the Terrific Twos.

We interrupt regular scheduled blogging for chocolate! (Worth it...trust me!)

Today I had planned to put up the solar oven post. The solar oven post will still be going up...just tomorrow instead.  Plus the slight delay will allow me to try yeast bread, which is pretty much the only thing I haven't attempted yet.  But I've been super excited about sharing my experience with everyone about using the solar oven to cook just about anything under the sun. (Pun intended. Hee hee.) So why am I delaying it?  What in the world could be so good that I push aside a whole week's worth or cooking and research?

Two words.  Chocolate Cobbler.

The recipe has been floating around my message board for a few weeks and I've been meaning to try it but never got around to it.  The heat wave this week didn't help either.  But after I made cornbread and rhubarb crumble in the solar oven without a problem I figured I had to give this recipe a try.

It is so super easy to make but the wow factor is over the top.  I shared with my neighbors and all the kids. Across the board everyone agreed that I needed to do a Field Trip Friday for this recipe so that people could make it over the Memorial Day weekend.  So make it.  Now.  Today.  And tomorrow too...because it's that good that you will want more.  You will thank me later.  Go enjoy!

Field Trip Friday - Tales of the Wife

Sorry for the lack of blogging.  There has also been a serious lack of cooking/recipe writing.  The only cooking I've done has been thrown together fast to feed the family.  The only exception was the Chicken Wild Rice Soup recipe that I'm working on.  But even that was easy...and this time I didn't write it all down.   My back is boss right now and until the drs figure out the next steps there is not a lot I can do other than lay down and pray. 

But one thing that has made the last weeks of intense pain a little easier is the support I get from family and friends.  I am truly blessed in this department.  I am also very lucky to have found a super supportive on-line community.  It was because of this community that I decided to blog in the first place and it was through them that I met today's Field Trip Friday blogger.

Jacqie is one of those people that you think has to be too good to be true.  She is as beautiful on the inside as she is on the outside...and she is a looker!  She also has two adorable boys and great sense of humor.  Which I'm pretty sure comes in handy while chasing two boys!  Her blog, Tales of the Wife, is funny and full of fun little facts too (like her Summer First Aid post).  She's also a cloth diapering, breastfeeding and babywearing momma.  But she's also a realist.  I like people who "get it" and don't take themselves or life too seriously.

Field Trip Friday - Laine's Letters (Pizza Sauce) & My Three Princess (yep...it's a two for!)

I have to give credit where credit is due.  I never would have found the recipe for this pizza sauce if it wasn't for my amazing friend Robin.  And I can't give credit to Robin if I don't brag about her, her blog, our friendship, her stunningly beautiful daughters and her strong as steel faith. 

I met Robin just under four years ago.  We met because we both gave the same advice to someone on a fairly mainstream message board.  This poster had a little one with an ear infection and Robin and I both told her to use Garlic Oil. Considering that we had both never seen anyone else give that advice on line AND that we lived within a few miles of each other a friendship was born.  Turns out that we had a lot in common and a shared respect for women with strong minds and a willingness to debate issues without attacking the other person.  We have been there for each other through happy times and scary times and we both say that it feels like we have friends forever.  And did I mention that her children are beautiful?  Don't take my word for it.  Check them out on her blog, My Three Princesses.

I mentioned earlier that Robin has a rock solid faith.  While mine has wavered over the last few years and I still struggle with finding my spiritual path, I can always count that Robin's faith is steadfast and strong.  She has this grace about her, this peace and this knowing that someday I hope to achieve.  It is her faith that led her to the blog Laine's Letters.  While Robin found this site for spiritual guidance, I thank my lucky stars that she found it because of the recipes.  Robin would tell you it was God's will...I just know that this is the best darn pizza sauce I've ever made and the fact that it's ready in under 3 minutes is enough to make anyone jump with joy.  Enjoy.

It's been a busy day here at RITK!

Wow. What a day. For very good reason I am blogging from bed, resting with my feet elevated and an ice pack on my back. Today has been long but wonderful and I can't wait to share the good news with all of you. Some I can share now...and some has to wait. ;) But I promise that some things really are worth waiting for.

I started my very busy day by throwing a pot roast in the crock pot because I knew I was going to be pretty much out of commission by dinner. And I was right...but we still ate great. I have perfected a recipe for Brown Ale Pot Roast and will be sharing it on RITK soon. I had to make it at least 6 times to make sure that it really was that easy and that good. And it was.

But why was I going to be done for the night early? Because for the third year in a row I have shared a wonderful Sunday morning and mid afternoon with my friend Kathy at the MN Living Green Expo. It was wonderful. We got to walk around and talk to so many different people and vendors. I was able to talk with a number of different farmers and can't wait to do a post on CSAs. There were so many great food items and vendors who are looking forward to sharing their green living products here on the blog. Stay tuned because I've got so many yummy things coming soon! And the heartburn from the amazing jerk chicken from West Indies Soul Food...man oh man was it totally worth it. We ate there last year and had to go back this year and my taste buds and my tummy might have been burning but the flavors were amazing, complex and worth it! And I must crack their sweet potato pie recipe. Must.

But then the day got better. :) I got home and got a phone call from my friend Stephanie Digby and she offered to bring over some extra rhubarb that she had. YAY! Which cemented my idea that I had last night that I should do a week of rhubarb recipes here as a kind of on-line rhubarb festival. So if you have a favorite rhubarb recipe to share please share it with me. I am especially looking for a savory recipe to try out.

When I finally got to sit down and check my e-mail I got even better news! Some is a super secret that I will share as soon as I can (all I can say is I screamed I was so excited!) and some I can share now. Please look to your left.

Birthday Cake Part 2/Field Trip Friday

My Sous Chef turned two on April 7th. Last year she was super sick and spent the night before her birthday party at our local Children's Hospital. Needless to say, no birthday party for her. :( This year she is healthy, happy & thriving so she got not one but TWO birthday cakes! One on her actual birthday and one on that day of the big party. I'll have that recipe later (thanks Robin!) but today is the recipe I actually made. I wanted something pink and other than that I had no idea what to make. I used the power of SwagBucks and found a recipe for a yummy looking strawberry cake and another recipe for a rhubarb frosting and an idea was born! Strawberry Bundt Cake with Strawberry Rhubarb Frosting! And MAN was it good!

So here is a little field trip to the blog that gave me the fabulous pink cake recipe. I can't wait until strawberry season is back so I can make it again! Enjoy.

Field Trip Friday - theunsuccessfulblog

I love my friend Jen. We have a ton in common. We are both extended breastfeeding, cloth diapering moms to one boy and one girl. Our boys are both the oldest and we both have had interesting and similar life experiences that have led us to where we are now in our lives. Jen and I also both share a self deprecating sense of humor and we both use humor to basically survive.

We also both have an insane passion for food. The obsessive kind of passion that takes over your brain so that you are constantly thinking of flavors and ingredients and...well...you get my point. But most important...she understands why my #1 Taste Tester is not allowed to cook in my kitchen after he ruined one of my Calphalon pans. I still shudder and want to cry when I think of the black char that was burned into the metal. I also still want to know how the heck he managed to do it! I mean wow...that took effort. But that is another story for another day.

Field Trip Friday - Coconut & Lime

So I have this thing about coconut. I love it. A lot. Okay...more than a lot. Luckily I have a few friends who not only understand, they also share this obsession. One of them is my good friend Robin, who I have mentioned before. She is the one who showed me this amazing food blog, Coconut & Lime.

I love her play on flavors and her willing to take risks. I love that her recipes are pretty easy to follow. I love that she loves coconut, lime and rhubarb. I especially love that she loves rhubarb...as my past posts show that I love rhubarb about as much as I love coconut. So it seemed fitting this year that when I was looking for recipes for my Sous Chef's second birthday cake and google gave me a recipe from Coconut & Lime that I had to use that recipe.

I picked the Rhubarb Frosting. It was simply wonderful. I changed it up a bit (shocker...right?) and didn't discard the rhubarb, I pureed it in the food processor instead. I also used pureed strawberries instead of the water but the basic premise and result was the same...easy and super yummy. Like...eat out of the bowl yummy. Which is exactly what the birthday girl (okay, I helped) did. It was awesome. Enjoy!

Field Trip Friday - It's time to make the donuts!

For well over a year I have been looking for a great homemade donut recipe. I wanted something simple yet tasty and something that would pretty much knock my family's socks off. I even appealed for help here is this post when I first started this blog last year. Nada. Zilch. So I tucked the dream of donuts away and mourned the loss of Krispy Creme near me.

Then I found IT. The recipe. Sure I'd tried others and they were okay, especially if I wanted to make jelly filled. But I wanted a simple raised glazed with plain or chocolate. Nothing fancy here...just the good stuff. And I found it.

For the good of the blog I tried it out. More than once even. You know...I had to be sure. ;) You will be happy to know that they are fantastic. Although my husband hasn't had the chance to try them yet...for some reason there are none left when he gets home from work.

Field Trip Friday - The Crock Pot Blog

I've used a few recipes from this blog and I give it out all the time but I had forgotten to use it myself. Until this week. Someone on the EFF Board linked one of the recipes and it sounded so good that I had to try it. Lucky for me I had all the ingredients here in the house so it made it super easy...and easy is a huge bonus for me right now because I'm supposed to be resting and not doing much of anything until my back gets stronger.

So I have a feeling we will be visiting this blog a lot here at the Hippy household. So here it is. The Crock Pot Blog. Enjoy!

Field Trip Friday is Back! This week it's all about Rhubarb :D

I love rhubarb. It's one of those things that I wait all year for and then treasure and savor and try to prolong for as long as possible. I even chop some up and hide it in the freezer for those long winter days when I dream of the sweet tart of rhubarb and the promise of a bright spring.

A few years ago I stumbled upon this rhubarb lovers site and it helped me to appreciate rhubarb even more. It's not just for desserts and the medicinal properties of the plant are rich indeed. I hope you get some insight, ideas and yummy recipes from this site.

Oh..and can I mention that thanks to this site I now realize that the combo of strawberry & rhubarb has nothing, nada, zilch on rhubarb paired with blueberry. Yum. Enjoy!
