The Ultimate Fast Chocolate Fix

I know, I know. The 5 minute chocolate cake in a mug recipe has been going around the internet for awhile. I tried it. It sucked. Blech. I was never so let down by chocolate in my life. I *knew* there had to be a better way.

So I played. I will admit that the first try wasn't so great. It was better then the original but it wasn't what I wanted. Tonight's try did it. I even fooled my husband and taste tester. He got mad at me and told me I was supposed to be resting. I told him I whipped it up in the commercial break. He is now sold on the cake and might be requesting it every night.

With out any more delay...here it is! ENJOY!



The Ultimate Fast Chocolate Fix
aka: The BETTER 5 Minute Chocolate Cake in a Mug

Ingredients:
1 tbsp all purpose flour (I actually used King Arthur's White Whole Wheat because it's what I had)
3 tbsp sugar
4 tbsp cocoa powder
pinch of salt
1 egg
3 tbsp milk
2 tbsp oil (I used plain vegetable oil but coconut oil would be better, I just didn't have it)
1 tbsp brandy (or other liquor, fruit juice or even just more milk)
1 tsp vanilla extract

Directions:
1. Mix flour, sugar, cocoa and salt in a large mug.
2. Add all other ingredients.
3. Cook in microwave for 2 1/2 - 3 minutes. (My microwave cooks hot/fast so I only needed 2 1/2 but you might need the full 3 minutes. You may need to play with this.)
4. Let sit in microwave for 1 minute.
5. Take out, put onto plate and enjoy!

* This cake is a lot like what you would expect out of a flourless chocolate cake. It is very rich and satisfying and you *might* need to share this with someone else. Then again, maybe you won't want to. ;)

This is soooooo good, fresh out of the mug. To make it even more sinful, I topped mine with a bit of warmed caramel sauce and whipped cream. Shame on you for tempting me like this!!!

OH.MY.GOSH! This cake is so good, especially for a super fast choco-fixx. Everyone should try this.

I did a variation on the listed instructions.... Instead of oil, I used applesauce. Instead of brandy I used Southern Comfort, and instead of vanilla extract, I used almond extract.

This really is sinful! Very rich, would be great with a vanilla icecream, or whipped cream. Even a warm chocolate sauce would make it even more rich!

My hubby was in complete and total shock when I walked out of the kitchen with the cake on a plate. He asked how I made it so fast and his eyes about rolled back in his head when he tried it. :)

Changes/Substitutions:
1 tbsp sugar
6 tbsp hot chocolate mix (2 packets)
1 tbsp oil
1 tbsp creamy peanut butter
1 tsp vanilla extract
chocolate and pb chips (your preference)

Review:
I had previously made the recipe using milk instead of liquor and microwaved for 2 mins 45 seconds. It was too dark of a chocolate for my preferences and not as dry as I would have wanted for a "cake" texture.

The version posted in my comment is much sweeter and I LOVE it. The chocholate and PB chips kind of stuck to the bottom of the mug and it was a nice little melty treat with each bite of the cake. I also liked the texture better even if it wasn't very much more dry like "cake". It was so tasty it didn't matter. I think the only improvement to be made is more peanut butter!

So I just made this and it's soooo good! No more spending lots of money at store for the name brand stuff. I used Kaluha and addd some dark cocoa powder. Just one heads up, make sure your eggs mixed well. I had some cooked egg white in mine
