The Many Faces of Chocolate Cake

And a GIVE A WAY!

So my Ultimate Fast Chocolate Fix (aka The Better Chocolate Cake In A Mug) seems to be a hit. And the best part is that I keep hearing about different variations that people are trying. So many cool ideas that I can't even keep them all straight.

Good - SO much better than the original, but (and I did it without any liquor as I didn't have any that sounded like it'd go) it needed a bit more kick. I hope to try a few things in the future!! I may try to add some coffee... Everything is better with coffee...

"Cake in a Cup" as I refer to it is amazing! I had to make variations. I didn't have vanilla so I used almond extract and I used rum for my liquor. It had an amaretto taste to it.
I'm getting ready to make it again, with milk this time though, hubby is sick and doesn't want rum in his. And the coffee idea above, I will definitely be trying in some way. I do agree, everything is better with coffee. : )

I forgot to add that I used safflower oil, which probably doesn't change anything. But I don't know a lot about oils.
I also put caramel sauce and whipped cream on top.

I made this last night with coconut milk (none of us can drink cow's milk), 2 tbsp agave nectar instead of sugar, and Ener-G egg replacer (my son has an egg allergy and I wanted to save some for him). My intentions were there- I swear.... but there was none left this morning... SO SO good!

OH.MY.GOSH! This cake is so good, especially for a super fast choco-fixx. Everyone should try this.

I did a variation on the listed instructions.... Instead of oil, I used applesauce. Instead of brandy I used Southern Comfort, and instead of vanilla extract, I used almond extract.

This really is sinful! Very rich, would be great with a vanilla icecream, or whipped cream. Even a warm chocolate sauce would make it even more rich!

My hubby was in complete and total shock when I walked out of the kitchen with the cake on a plate. He asked how I made it so fast and his eyes about rolled back in his head when he tried it. :)

It was delicious! I made 12 of them, to hand out at a lovely picknick in the park. I put some extra chocolate topping on them and that gave it an extra nice, guey taste!

ALSO: since the baking only took about 5 minutes, I designed a batch of cute hang tags with happy & hungry caterpillars on them. They are Etsy PIFs as well, you can 'buy' them at HomemadeHappinessNL.etsy.com!

Happiness is homemade - in less than 5 minutes!

I haven't tried it yet (since i don't have the ingredients). after i try the original, i will alter it by adding PB in some form. either a PB drizzle or swirl or chips. yummeroo. already looking forward to it!

My variation:
1 tbsp sugar
6 tbsp (2 packets) of hot chocolate mix powder
1 tbsp oil
1 tbsp creamy peanut butter
sprinkle to a handful of chocolate/peanut butter chips
microwaved for full 3 minutes

I made this cake in a mug using the better version recipe last week. It was a little "dark chocolate" taste for my preferences so I set out to make something sweeter. And with peanut butter b/c that makes everything awesome. I also knew I needed to microwave a bit longer than I had the first time (2 mins 45 second).

The above variation turned out AWESOME. The chocolate and PB chips sunk to the bottom so every bite had this yummy gooey meltiness. The texture was still a little wet but I think that's just how it's supposed to be. And the flavor was so good, I didn't care. The only thing I might do is add more peanut butter. :)

I have made it several times. I tried the original first, only we used Baileys as we don't have brandy in the house. Yummy. Then I tried it with dark chocolate chips and peppermint schnapps- also yummy. And finally I tried it last night with toffee bits and butterscotch schnapps- I think by far the best.
It is a very moist dark chocolate cake. I think I'm going to keep trying it and try to make it sweeter. I'm more of a milk chocolate fan than dark. But still very nice when I've had a hard day at work.

I just tried this last night and it was great! Thanks for a super delicious recipe. DH has celiac disease so I made it gluten free. I used 1 scant tablespoon of teff flour and about 1/3 tablespoon of sweet rice flour. I also added some baking powder and xanthan gum. I didn't measure those, but I used no more than 1/16 of a teaspoon of each (and probably less). You could definitely use other GF flours. I'm going to try some garfava and tapioca flours next. I used milk for all the liquid.

The texture was wonderful. It was so moist and delicious. It did not even taste gluten free. Really, it was pretty blissful. :)

I will be experimenting with different gluten free flours (garfava and tapioca flours next) and we'll see which combo is best, but the teff/sweet rice was great. I guess I'll have to eat a few experimental cakes in the name of science...
