Cranberry Orange Scones

This was both a success and a fail in one recipe. The success was that for the most part these were great. The texture was good and the flavor was right. The fail was that I forgot to add the dried cranberries early enough and then I had the oven set too high and didn't watch them like a hawk because I got distracted with the cute baby.

So...they were good and the recipe is good. They would have been perfect if I could have given them my undivided attention. But realistically that won't be happening for a couple of more years. Oh well. At least the top half tasted great. And maybe me forgetting to add the cranberries wasn't such a bad thing because Monkey got to have a few plain orange scones.

Hippy's Cranberry Orange Scones

Ingredients:
3 cups flour (may need more depending on humidity)
1/3 cup sugar
1/2 tsp salt
1 tbsp baking powder
1 stick butter, cubed
1 cup buttermilk or sour milk
2 tbsp orange juice concentrate
1/2 cup craisins

Directions:

Preheat oven to 450 degrees.

Mix orange juice concentrate into the milk.

Mix all dry except craisins in large bowl. Cut in butter with pastry cutter or your hands until mixture resembles very course corn meal. Add in the craisins.

Slowly add in milk mixture, mixing with your hands. If you need to add more flour so the dough isn't sticky.

Roll out the dough on a lightly floured surface. Cut into strips and then into triangles or use a biscuit cutter. I always use a pizza wheel.

Transfer to cookie sheet at at this point let them rest for 10 - 15 minutes.

Bake at 450 degrees for 12 - 15 minutes or until golden brown.

And at this point I feel the need to show the following picture for full disclosure. Even good cooks have bad days.

Ooh those sound great! Have you ever used a scone pan (a la Lodge) or do you think it's not necessary?

I haven't used a scone ban before and didn't even know there was such a gadget. But now I'm intrigued and must go out and research them. lol
