Very Basic Muffin Recipe

Good morning from the Frozen Tundra. Breakfast is one of my favorite meals to make. Especially on the weekends when I have a little more time. But there are days when I don't have time to make something hot and yummy or when I'm just too sleepy to think. This is my go-to recipe that helps me look like a super star even on days when I'm not feeling up to par.



Very Basic Muffin Recipe

Ingredients:
3/4 cup butter or oil
1 cup sugar
3/4 cup milk
1 egg, slightly beaten
1 3/4 cup flour (any combination of white or whole wheat)
2 1/2 teaspoons baking powder
1/2 teaspoon salt
1 tsp vanilla

Directions:
1. Preheat oven to 350.
2. Mix dry ingredients.
3. Mix wet ingredients.
4. Combine all ingredients.
5. Scoop into lined or greased muffin tins.
6. Bake at 350 for around 30 minutes, or until golden brown.

Variations:

1.Fold in frozen or fresh blueberries, tossed in a little flour. Even better, add a little cinnamon too!

2.Peach Muffins! You can even use canned peaches. Just drain the juice from a can of diced peaches and use that juice to replace part of the milk. Fold in the peaches and you are set to cook. For extra yumminess add in some cinnamon and nutmeg to the dry ingredients. Enjoy!

3.Make Surprise Muffins by only filling up the muffin cups half way and then putting a tsp of your favorite jelly in the middle of the muffin mix. Top with more mix and bake up for a yummy surprise. Kids especially love this one.

4.Fold in nuts, chocolate chips, dried fruit or anything else you can think of. This basic recipe is just the start.
